Red Basil Vinegar

2 quarts (in all) packed fresh red basil leaves

1 quart white wine or rice vinegar

Start with 1 quart of leaves in a clean glass jar. Cover them with the vinegar and tamp down gently with the handle of a wooden spoon, bruising the leaves slightly and ensuring they are completely immersed. Cover and place in the refrigerator for 2 weeks. Strain off the vinegar, discard the basil, and wash the jar. Add another packed quart of leaves and return the vinegar to the jar. Allow to steep in the refrigerator for 2 more weeks. Drain, transfer to sterile bottles, cap, and store in the refrigerator for up to 4 months.
